Casseroles are so easy; pasta or rice, some kind of sauce; veggies or not; cheese or not.  I usually take cooked pasta, spaghetti sauce, italian sausage or ground beef; cheese mix it up; pop it in the oven for 20 to 25 minutes, make a salad and dinner is served.  The combinations are endless, experiment with things you and your family like.

Here's an easy, yet delicious recipe that my family loves.   Chicken Casserole   3 cups cooked chicken breast 1 cup melted butter 1 can cream of chicken soup 1 8 oz package of stove top stuffing mix 4 cups cubed squash ½ zucchini ½ yellow crook neck 1 cup diced onion 1 cup sour cream Mix dry stuffing and melted butter together, put half in the bottom of a 9x13 pan sprayed with the nonstick spray Sauté onion and squash together for about 8 – 10 mins. Mix soup and sour cream together with veggies. Layer ½ the stuffing, ½ the veggies, chicken, remaining veggies, remaining  stuffing. Bake uncovered for 45 – 50 mins. At 350. Serves 8.   Enjoy!!

my recipe is Shepherds pie...easy to make and pretty nutrtious...kids love it Brown one pound of Ground Round beef, with some chopped onion. Add a crumbled beef stock cube and 1/2 cup water. Add 1 cup diced carrots. Tranfer to a oven proof dish. top with mashed potatoes...you can use instant mash...make up according to package. Bake for 45 mins at 350. Serve with peas or baked beans.

1 lb cooked chicken breast, cubed1 can cream of mushroom soup1 can chicken noodle soup1 1/2 cups minute rice3/4 cup hot water
Mix chicken and soups in a 13x9 pan. Add minute rice and hot water. Cover and bake at 350 for 45 minutes.

MEXICAN CASSAROLE  U NEED ICAN OF CREAM OF MUSHROOM1 CAN OF CREAM OF CHICKEN 1 CAN ENCHILLADA SAUCE 1CUP OF MILK 2CUPS SHREEDE YELLOW CHEESE 20 TORN CORN TORTILLAS 1LB GROUND MEAT SLICED ONION OPTONAL
CUT TORTILLAS INTO TRIANGLES INTO A BUNCH OF SMALL [PIECES AND LET SOAK IN MILK WHILE BROWNING MEAT AND ONION .AFTER MEAT COOK DRAIN . POUR CREAM OF MUSHROOM AND OF CHICKEN AND ENCHILADA SAUCE AND TORTILLA S WITH MILK .MIX WELL TROW  2 HANDFUL OF CHEESE MIX WELL .
NOW LAY IT INTO A BAKING PAN AT 350 DEG SOME MORE CHEESE TO YOUR DESIRE. BAKE 20 MIN .TAKE IT OUT LET IT COOL OFF . AND SERVE WITH SOURCREAM OR AVACADOS .

Enchilada Casserole: Brown 1 lb ground chuck and 1/2 chopped onion. Add 1 tsp . minced fresh garlic, 4 Tb. chili powder, 3 Tb. cumin, salt & pepper to taste. Stir well, then add 2 C. salsa and a can of black beans OR pinto beans. In greased 13x9 casserole dish, place a layer of flour tortillas. Spread with sour cream, then a layer of the meat/bean mixture. Sprinkle w. 1 C. grated sharp cheese. Add another layer of flour tortillas, then sour cream, the remaining meat/bean mixture and another cup of cheese. Top with flour tortillas. Bake at 400* for about 20 mins. Remove from oven, cut into squares and place on plates, top with shredded lettuce, diced tomatoes...serve with extra sour cream and salsa. yum!

I live Shepherds pie too - but I often jazz it up a bit by adding some lo-cal italian dressing to the beef/veggie mix before baking the pie

Mom's CasserolePreheat oven to 350Mix:1 lb ground beef plus 2 tbsp dried minced onions, browned and drained1 16oz bag wide egg noodles, cooked per directions on bag1/2 lb velveeta cut into 1/2 inch cubes1 26oz can condensed tomato soup, undilutedPlace in oven for 15 mins or until hot and bubbly and cheese is melted.

Tuna rollups:  1 can of tuna fish, 1 egg beaten, chop up celery & onion.  Mix together.  Unwrap 1 container of crescent rolls.  Spoon 1 tablespoon of the mix in each roll.  Roll up .  Put on parchment paper cookie sheet.  Bake at 350 degrees for 15 min.  Just until the rolls are lightly browned.  Heat up 1 can of cream of chicken soup and 1/2 can of milk.  Spoon over tuna rolls on your plate.  Enjoy....

I made this when my kids were little. They still love it and call it "comfort food".  Brown 1 lb. ground beef (season as to taste), Make up a batch of mashed potatoes, and  a can or two of cream corn.  Layer in casserole, ground beef, cream corn, mashed potatoes. Top off with some butter. Heat through in oven. We like to eat a fresh green salad with it! Enjoy!

I am sorry I don't have any to share, but does any one have a mac and cheese casserole of some sort......what cheese do you use in the above recipes....velveeta?  Thanks for sharing.

Here's my chicken & rice casserole, it's so creamy & comforting, it's the first thing my family asks for on a cold and snowy day. It's even better the next day so we're always happy if there are leftovers.
2 cps cooked chicken, cubed or shredded
2 cps cooked rice (I add bouillion cubes to the liquid)
1 can cream of chicken soup1 can cream of celery soup3/4 cp mayonnaise1 tbsp lemon juice3 thinly chopped green scallions
salt & pepper to tasteMix all together, pour into a 13x9 pan, top with crushed potato chips (crushed ritz or saltines with a little melted butter if you prefer). Bake at 350 degrees for 30 mins or until bubbling on the bottom.

I love this chicken and rice dish.  Put  1 1/2 - 2 lbs boneless skinless chicken breast in a 13x9 pan.  Mix together 1/2 c sour cream, 1 can cream of chicken soup, 1 can cream of mushroom (I don't like mushrooms so I use celery).  Spread over chicken.  Bake uncovered at 350 degrees for 50 minutes.  Top with French Fried Onions and cook another 10 minutes.  Serve over rice. The beauty of this dish is the chicken can go into it frozen :)

Comfort food casserole! 2 quart casserole dishpeel and slice 3 potatoes and put in dish1 pound hamburger, 1 onion (chopped), salt and pepper   Brown well  Next layer in dish3 0r 4 cups cooked large elbow macaroni    next layer in dish8 to 12 ounces cheddar cheese sauce   1/4 cup milk-heat up- 1 tablespoon flour stirred into milk WELL- 1 or 2 tablespoons butter, mixed with milk and flour, add grated cheese and stir til it melts wellThe more cheese, the BETTERPour cheese sauce onto top of layers.Bake in oven 350  for about 45 minutes or til potatoes on bottom are tender.  NOT a low calorie or carbohydrate meal, but it's GREAT on a cool day!!!

Maple French Toast Bake12 sicesof bread cubed....1 8 oz pkg of cream cheese, cubed.......8 eggs..... 1 cup milk....1/2 c. maple syrupArrage half of bread cubes in a greased shallow dish.Top with cream chease and remaining bread/ In a bowl.whisk eggs, milk, and syrup, pour over bread. Cover and refridgerate over night. Remove 30 minutes befor baking.Cover and bake at 350* for 30 minutes. Uncover and bake 20-25 minutes longer until golden brown.  Serve with additional syrup. YEILD: 8 servings*** I have also added cinnamon and nutmeg :)

Potato casserole- everyone loves! 2 lb shreaded frozen (hash browns) potatoes, 8 oz sour cream, 2 cans of cream of chicken soup, 1 cup shreaded chedder cheese- toss and put in 9 x 12  pan. Cover with 1 stick of melted butter. Then cover with 1 cup of shreaded cheese and 2 cups of crushed potato chips.  Bake at 350 for 1 hr.

Simple and kid friendly. 2lbs Hamburger meat, lean, browned in a frying pan with a large diced onion, then drain, return to pan add a cup of milk and 1 10 oz can of cream of mushroom soup, plain or the one with garlic is great. Bring to a simmer and season to taste with salt and pepper. Put in the bottom of a casserole dish top with Tater Tots. Place in oven at 400 for 20-30 minutes until tater tots are brown and crispy time varies depending on the tots you use. Remove season with salt and pepper top with a cup or two of sharp chedder, or any other kind of cheese you prefer. Cook for another 5 minutes. Remove from oven and allow to sit for about ten minutes before serving. You can add can veggies of your choice to it but we usually just have a side salad with it and corn muffins. YUMMMY!!! Its something that you usually can put together from ingredients you already have on hand my family loves it.

Mac N Cheese - I box elbow macaroni - cooked.  In a saucepan put I can cream of mushroom soup and heat, drop in velveeta, stirring until melted and creamy.  Use as much or little velveeta as you like.  You can thin with milk.  I put in a casserole dish and back with sliced hotdogs on top.  You are really just heating it thru.

CHEESY MEATBALLS
1 lb. hamburger (thawed)1 slice bread (crumbled or torn)1 egg1 c. cheese (of choice)1 can cream of chicken soup
combine hamburger, egg, bread and cheese.  form into approx 12 meatballs and place in greased 9x13 casserole dish.  spoon soup over meatballs and bake at 350 degrees about 40 minutes or until meatballs are thoroughly cooked.
