One of my favorite meatless sandwiches is grilled/sauteed bell peppers, onions, and mushrooms on a bun/slice of bread with a little mayo and cheese (your choice). Yum!

My go to low cal filling dinner is a veg frittata made with egg subsitute.  Sautee any type of veggies in a non stick pan with cooking spray (i especially like spinach and mushrooms then add the egg subsitute (1/2 cup per person).  i often add feta cheese to this combo.  If just for myself i put lid on and finish on stove.  If i am making for family i cook till mostly set and then place oven-safe frying pay in oven for a few minutes.

Pot of rice is the way to go for easy vegetarian meal.  2 cups of water, and add whatever spices to get the flavor you want, along with a dash of salt and olive oil.  When the water is boiling, add rinsed rice, and whatever vegetables need to be cooked or cooked in, like diced tomatoes, frozen peas, or diced squash.  Cover and turn off the heat, but leave it on the eye for 20-30 minutes.  As long as you don't open the lid, it will turn out perfect rice.  When finished, fluff and pour into a mixing bowl with whatever non-cooked vegetables you add, like canned beans or corn.  Add cheese if desired at the end.  This is a great easy meal because you can vary the flavors so easily -- Italian herbs and garlic for Italian, curry for Indian, tomatoes, garlic, cumin, and chili powder for Mexican, etc etc.

I have discovered there are so many great ways to get veggies.  It's not hard to get 5 t0 7 servings a day.  secret is spices, buy the unusual ones, experiment

OMG!  This sounds wonderful!! We are having tonight, "Make your own personal pizza!"  You add whatever you like.  I enjoy onions, articokes, mushrooms, garlic, basil, and tomatoes drizzled with olive oil, feta and mozzerella.  Yum!  We add a tossed salad with cukes, tomatoes, peppers and onions and what a great meal. The kids love having the option to add what they want making their own pizza extraordinary!!

All of the above sound GREAT!!!  I love a sandwich made with cubes, tomatoes, green peppers, onion, hot peppers, and any other veggie I happen to have at the moment with cheeses of any kind and a little mayo.  All cold and juicy.  Yum, yum!!!  It's good on a hoggie bun of wheat or white.  You can throw just about any combination of veggies on it and munch out!  Enjoy!  And leave the poor little piggy, cow, lamb or chicken alone.  Give them a break.  It's terrible what they do to animals these days to get them to our tables.  It would make you cry to see it.  I know, I've seen it first hand.  God didn't mean for it to be this way.

Veggie Quesidilla, awesome - heat a tortilla shell and add veggies and cheese.  Fold the tortilla over and flip when brown.  serve with sour cream and Salsa.

A fast, healthy vegetarian meal I often eat is a low-carb whole-wheat wrap with hummus (or other spread like Cilantro yogurt dip) and fresh veggies like cucumber, sliced tomatoes, red or green onions, a little lettuce, and maybe a few sliced pepperoccinis.  I then top it off with goat cheese (or feta).  It only takes about 5 minutes to make and really easy to do.

We go meatless one night a week because we are trying to eat heart healthy, and chicken and fish can only go so far!  Check out the American Heart Association cookbook or Mayo Clinic cookbook from the library and try a bunch of their meatless meals.  All of the ones I have tried are great!

In the summer heat we are loving tabouleh which is bulgur wheat with lots of parsley, mint, garlic and some olive oil.  Veg it up to the max with scallions, cucumber, tomato and black olives.  Great with some feta cheese added.  We serve it with lettuce leaves to make wraps.  A brilliant short cut is to use the "Near East" tabouleh mix, when you read the ingredients you'll be amazed that they are all actual foods so you can use the boxed version without guilt.

I make meatless chili that has at least three types of beans, tomatoes, onions, spices (including cinnamon which makes it taste great) and corn. To make it quickly you can use canned goods and it will only take a short time to cook.

  • Mango and cucumbersalad
  • 1 1/2 tsp cumin
  • 3 tblsp. lime juice
  • 1/2 tsp. salt
  • 1/4 cup Olive oilmix those incredients3 Mangos4 small cucumbers or one big one
  • 1/2 onion red
  • 3 tsp. fresh mint or 2 tsp. dried mint
  • 1/4 cup goatcheese
  • 2 tsp. almonds
  • mix all together

Heat some oil in a pan, add chopped onion. Let it turn transparent. Add any chopped veggie that is handy.Add some ginger garlic paste, turmeric,saltand a little water. Stir. If you want some heat add chili powder. Stir cover. Cook for about 5-10 minutes. Serve with bread or rice. Kids enjoy it too.

I make this with either thinly sliced green peppers or shredded carrott .... DELICIOUS !

I've heard of Ginger paste, but have never been able to find it in stores ...

Do mainstream Grocery stores sell bulgur ? I've never been able to find it.

A favorite of ours is Skillet Squash Sandwiches (the veggie filling also reheats very well!) Saute sliced yellow squash, sweet onion, zucchini slices in olive oil until crisp-tender. Add a couple of chopped roma tomatoes, salt, pepper, and a tablespoon of balsamic vinegar and cook 3 mins. Serve on toasted whole grain buns with basil-mayo (1/2 cup mayo, 1 tsp basil, 2 cloves minced garlic). add a slice of provolone or mozerella cheese and enjoy!Lynn

We eat meatless most nights of the week. I make a lot of soups; tortilla soup, carrot chowder, and sweet potato African soup to name a few. Bean buritos are another meatless go-to meal for us. One of my favorite meatless summer sandwiches is this: mix cucumber and tomatoes with some vinegar/salt/pepper. On sourdough bread, layer romaine lettuce, the cucumber salad, and then sprinkle with feta cheese.

Add veggies to the things you already love: pizza, quesadillas, etc. It gives them more flavor and makes them better for you!
