Cookies for Breakfast?!

Cookies for Breakfast?!

1 1/2 cups whole wheat flour or whole grain pastry flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup olive oil
1/2 cup sugar
1/2 cup honey
2 medium eggs, lightly beaten
2 tablespoons fat-free milk
1 1/2 tablespoons vanilla extract
2 1/4 cups quick-cooking oats
1 cup golden raisins
1/4 cup semisweet mini-chocolate chips (or a dark chocolate bar broken into bits)

Preheat the oven to 350°F.

In a large bowl, combine the flour, baking soda, and salt.

In another large bowl, whisk the oil, sugar, and honey until creamy. Add the eggs and stir until thoroughly combined. Add the milk and vanilla extract and stir again. Add the flour mixture and stir until just combined, then fold in the oats, raisins, and chocolate chips. Drop the dough by a tablespoon onto an ungreased baking sheet.

Bake for 9 to 13 minutes or until slightly brown but still very soft. Cool on the baking sheet several minutes, then carefully transfer to a rack.

When completely cool, store in an airtight container.

Sounds tasty. I like that you use low-fat milk and olive oil. Oats and wheat flour are also healthy. I will have to try this recipe. This recipe would be great to replace my unhealthy oatmeal raisin cookie recipe. I'm going to share this recipe with my friends and family for holiday cookies.

This sounds a lot like a "granola bar" recipe I use. I think I will make some! Love oatmeal and raisins.

This sounds like an overall good recipe. I think I will replace half of the oil with unsweetened applesauce, and leave the sugar out altogether. I would pair one large or two small cookies with some fruit for a quick breakfast, otherwise these will be an afternoon snack with (soy)milk.

Just add 1 Tbsp Whole Ground Flaxseed to add your extra fiber, lignans & Omega-3 Fats

I think I will be making this tomorrow, too bad I don't have any whole wheat flour. Oh well I will make sure to ad my Flaxseed and use Soy instead of low fat milk.

I love "breakfast" cookies, my husband likes to tease me about them.  I'm going to try this recipe but without all the oil.  I'll substitute applesauce for at least half of the oil.  I'll also probably use dates instead of raisins. Thanks for the recipe!

I am a big believer in thinking outside the box when it comes to breakfast-eating something for breakfast is better than eating nothing.  These cookies sound great and, frankly, a lot less sweet than most cereals or cereal bars or whatever.  Our family has been known to eat pizza, pasta, etc. for breakfast, depending on what leftovers we have in the fridge.  Our best weekday breakfasts are ususally bagels and smoothies. On the weekend, we splurge with our "greasy spoon" breakfast of waffles, eggs, and bacon.  We also keep a large variety of yogurt flavors, homemade granola, and fresh fruit salad for those grab and go days.  I try to make sure everything is easy reach and easy fix the night before so our mornings are not so hectic!

If you have ever served cereal to your kids, you have served them basically the same ingredients.  At least with homemade cookies, you control the fat, sugar, etc. and no preservatives are necessary!

For those that do not like raisins use dried cranberries instead. I do not like raisins and I always use dried cranberries instead!
