Simple, Sizzling Sandwich

Simple, Sizzling Sandwich

8 slices farmhouse-style nutty-oat bread
1/2 lb extra-sharp Cheddar cheese, sliced
1/2 cup drained prepared salsa
1 loose-packed cup bagged baby spinach

Heat a stovetop griddle over medium heat or set a contact grill to medium.

Place 4 slices bread on a work surface. Coat with cooking spray. Flip. Top with cheese, salsa, and spinach. Cover with remaining slices of bread. Coat tops with cooking spray. Cook on the griddle or grill, turning occasionally, 5 minutes total, or until cheese starts to melt and bread is well browned. Reduce the heat if bread is browning too quickly.

Makes 4 servings

Per serving: 460 calories, 25 g protein, 41 g carbohydrate, 22 g fat, 60 mg cholesterol, 5 g fiber, 914 mg sodium

This sounds very yummy, but the calories sound a little high for the ingredient list??

I agree , think calorie count is too high.......  how depressing..................  cuz sounds delicious. If you change the cheese to fat free kind. and use 40 calorie slices of bread ........  the count will be lower ,correct?

I love salsa on pretty much anything...I never thought about putting it on grilled cheese. I'll give it a shot.  The calorie count does seem high, though.

It is probably the bread; some of those oaty nutty and delicious sounding breads are loaded; try lighter bread or one of the great sandwich rounds; low or no fat cheese and the rest...Voila!  a great sandwich...

Sounds good, but the sodium is sooo high!  I guess the salsa adds it up!

duh, i never thought to use salsa on a grilled cheese sandwich...will definitely try this recipe with some alterations; shredded monteray jack cheese (sp?) and my own home baked bread. heck, my son might even eat this...

Yes I will try low fat cheese and I have bread that is 50 cals a slice, and the salsa and spinach are hardly any calories! Sounds yummy!

too much cheese...I love the spinach idea.  I always have subway toast my sandwich with spinach added but never think about doing it at home.

Since I love grilled cheese/tomato, this is a great change of pace! (If you consider that a 1 oz svg of whole milk cheese = 100 calories (sandwich shown uses 2, 1 oz slices cheese per) and a slice of bread averages 120, than 460 for this sandwich incl'g salsa sounds about right! Using 2% or low fat cheese and 40 calorie a slice bread would save a considerable amount of calories. One could also do open face toasted using only 1 slice bread, 1 slice cheese topped with salsa & spinach (after toasting!) This would also work well using a whole wheat english muffin, maybe?

I believe the ingredients are for 4 sandwiches not just 1.  That's why the calorie count is so high.

This sounds yummy...why didn't I think of adding salsa. Yes I think I can easily cut some of the calorie count by modifying it just a bit.

This sandwich has everything I like including spinach!  The salsa is a new twist.  I think I will try it before making for my family - they are really picky eaters:)
