yay. great tip. i tried this 2 days ago and the ginger root can still be grated when frozen. this is the best idea for ginger root. lasts months. stays fresh!

it is easy to cut off a chunk when frozen, i do this to add ginger when brewing tea, esp in the winter!

This works equally well for fresh peeled garlic, just keep in the freezer then use a small grater to use whenever you need it.

I have been doing this for years just be sure to label or your spouse etc. may throw it away.
