A Pot of Gold

A Pot of Gold

3/4 lb boneless leg of lamb, trimmed of all visible fat and cut into 1" cubes
3/4 lb sm red potatoes, quartered
6 cups water
3 cups fat-free reduced-sodium beef or chicken broth
3 med carrots, sliced
3 med parsnips, sliced
1 pkg (8 oz) shredded cabbage
1 lg onion, halved and sliced
1 bay leaf
1 tsp dried thyme
1/2 tsp salt
1/4 cup chopped parsley

In a Dutch oven, combine lamb, potatoes, water, broth, carrots, parsnips, cabbage, onion, bay leaf, thyme, and salt. Cover and bring to a boil over high heat.

Reduce heat to medium-low. Partially cover and simmer 45 minutes. Stir in parsley.

Cook, uncovered, stirring occasionally, 45 minutes, or until lamb is fork-tender. Remove and discard bay leaf.

Makes 4 servings

Per serving: 321 calories, 25 g protein, 46 g carbohydrate, 5 g fat, 46 mg cholesterol, 10 g fiber, 1,054 mg sodium

I wonder if I can put this in a crock pot and let it cook all day. If it will taste as good as it sounds.

Lucy, I don't see any reason why you couldn't put it in the crock pot.  I do think it might be a bit more soupy and the texture a bit different, but I think it will work.  Kathy

Yes, for the most part. But NOT the potatoes or the carrots. they should not cook that long. They will get mushy an taste awful. Put them in about 1/hour before finished.

Whenever I use my crockpot, I throw in everything & seems to come out OK.  I use the baby carrots, they come out fork cutting ready & using chunks of potatoes, they're fork ready too & flavorful.

I always put my carrots and potatoes in for all day and they do fine.

I also place my onion,celery,carrots and potatoes in at the same time. Put vegies on the bottom and place meat on top. I think the liquid should be decreased by 1/2 at least.

My daughter does an 'Irish Stew' but with beef instead of lamb and no parsnips (she won't touch them) LOL...but she throws it into the crock pot all day and it really is delicious!  My Dad (whose Mom came from Ireland) says its just as good as Grandma used to make, and likes hers better with the beef and no parsnips (he says lamb and parsnips are an 'acquired taste' and he hasn't acquired it yet LOL)  Laughing

Oops...you stopped me at the lamb.  We make soup a vegetarian soup weekly and love it.  If we want to add left over meat to each bowl we can.  But we make it with whatever vegies we have on hand.  No rules apply.

    Hi Jill, What kind of beef does your daughter use to make her recipe? What does a parsnip taste like? Dont think Ive ever eaten one. Thank you
    I grew up on lamb but prefer beef & I also won't touch parsnips. Will have to try it at work one day for our supper. Smile

Lamb has always intrigued me.  I only have had it at a local Greek festival.  I will definitely try this yummy recipe.
