Peppers with 3 bumps on the bottom are sweeter and better for eating.  Peppers with 4 bumps on the bottom are firmer and better for cooking.

never knew this-but thank you so much-we plant about 10 to 12 different pepper plants every year in our BIG garden-now I can find the sweeter ones without having to try them all.

The flavor isn't the only attribute effected by the number of bumps on the bottom of green, red, yellow, or orange peppers. Peppers with 4 "lobes" on the bottom have a larger center than those with only 3 sections. This can be very important when you are paying by the pound. Considering how high priced peppers can sometimes get, choose ones with only 3 sections. You are paying by the pound for that seeded center so choose carefully, select peppers with smaller centers and save money.

Thank you for the tip. I usually go to my local Dollar Tree or grocery store and buy the frozen, bagged peppers. It's great for pasta dshes or omelettes. It saves, time, money an there is no chopping.

I have a Cayenne Pepper plant.  It was transplanted from a pot.  It has a lot of blossoms.  I will be getting about 11 small, green, thin cayenne peppers in the next 2 weeks.I also buy cayenne pepper from Walgreens.  .50 on sale for the shaker of cayenne pepper.
