Aluminum and Alzheimers are a big issue with me. I peel back the plastic wrap on the cheese block only to the point where I will use the cheese. Then I cover the open end with a ziploc bag or plastic wrap, adding a heavy rubber band to seal out all air. My cheese lasts a long time without molding.

If you do not touch the cheese with your fingers, it will stay fresh longer, and a zip lock with air pressed out will work as well!

Sounded like a great tip until I read the Alzheimer's post.  I will try the Rubbermaid produce containers.  I throw away so much food because it goes bad before I can eat it all!

I put my leftover block cheese in the Rubbermaid containers specific for Produce (they have green lids on them) and they keep for a LONG time & taste as fresh as when you first open the package :)

Works, but...make sure there are no tiny holes in the foil or you will get mold!!

actually wipe off mold with vinegar & put in plastic. The cheese will react with the Aluminum foil & create a chemical that hurts brain cells & can lead to Alzheimer's. aluminum big no no... sorry

This is so true!  Velveeta is wrapped in foil and lasts a very, very long time.

Thanks for the tip. I just opened up a wedge of cheese and was hoping that we could eat it before it molded. Now we can take our time.
