Easy Potatoes

Category: Home
The quickest and most delicious way to prepare potatoes is to quarter five to seven red skinned washed ataers skin on and lay in a foil covered pan then sprinkle with olive oil and seasonings and choppes green onions, gently toss and close up foil to create a tight seal and bake @ 350 degrees till tender or about thirty minutes, they come out tender and buttery and need no excess butter, Great for left over fried ataters in the am too !! My family loves potatoes this way!!  For less baking time...LOL...for those who can't wait 30 minutes, just cut in smaller wedges and I don't close up the foil, so they are browned on the outside and tender inside!

This is a foolproof pleaser. And just as easy, use the same potatoes - washed and quartered and boil in a pot - water covering with a bouillon cube or two for about 10 minutes or until tender. Add 1/4-1/2 stick butter (to liking), sprinkle with garlic powder, and smash by hand. Add chopped fresh or dry parsley,  s&p to taste . Easy smashed garlic potatoes and a huge crowd pleaser!

This is for Tess who cuts red potatoes, adds olive oil and seasnings.  Try adding dry parsley and dry chives.  Toss all and put in a microwave bowl with cover.  Done is less than 5 minutes.  No need to bake in oven for 30 min.  Quick and easy.  Ginny

I am going to try this.  I love to leave the peelings on potatoes for the extra vitamins and fiber.

I think your recipe sounds good, and here's another one that we just made...cut washed potatoes into quarters or smaller so they are equal in size, spray a pan with Pam and put potatoes and any Italian dressing mix you like on it, and put into a 350 oven.  I did this while roasting chickens in the same oven.  After 1 hour, I added 1 cup of hot water to the potatoes and continued cooking about 45 mins.  They came out golden brown and delicious.

They are awesome. Alternatives would be sprinkling with dry cheeses like parmesan, or even sprinkle a little powder dressing like ranch... Yum, I'm going to go heat me up some....  Tongue out
