Turkey, Take 2

1 lb turkey breast cutlets, pounded 1/4" thick and cut into short, thin strips (or leftover turkey breast—see TIP below)
1/4 tsp dried thyme
1/4 tsp ground black pepper
1/4 tsp salt (optional)
2 tsp nondiet tub-style margarine or butter
1 med onion, chopped
1 sm green pepper, chopped
1 sm clove garlic, minced
1/2 cup reduced-sodium ketchup
1/4 cup water
1 Tbsp reduced-sodium Worcestershire sauce
1 Tbsp honey
1/4 tsp dry mustard
1/4 tsp ground allspice
4 kaiser rolls

Season turkey with thyme, black pepper, and salt (if using).

In a large nonstick skillet over medium heat, melt margarine. Cook turkey 2 minutes per side, or until lightly browned. Remove and set aside.

Coat a large nonstick skillet with cooking spray and warm over medium heat. Add onion, green pepper, and garlic and cook, stirring occasionally, 5 to 6 minutes, or until pepper is soft. If necessary, add 1 tablespoon water to the skillet to prevent sticking.

Stir in ketchup, water, Worcestershire, honey, mustard, and allspice. Simmer 10 minutes.

Add turkey, reduce the heat to very low, and cook 5 minutes, or until turkey is heated through and flavored with the sauce. Spoon onto rolls just before serving.

Makes 4 servings

Per serving: 368 calories, 35 g protein, 46 g carbohydrate, 5 g fat, 45 mg cholesterol, 2 g fiber, 595 mg sodium

I never give away the leftover turkey.  We live on it for days and this recipe sounds delicious.

We hoard the turkey and the bones. I boil it and then make Cheesy  Chicken Chowder, but with turkey. Known to my family as Cheesy THURKEY Chowder. I make several gallons. So family will get it with in the next week. It stays in the freezer until then. DH family will have the bones with meat on it wrapped up and ready to go with me every time we do holiday. So I make this 2 - 3 times in November and December.

I use my leftover turkey to make White Bean Turkey Chili....mmmm good, and a great change of pace to regular chili and a super way to use up all the bits and pieces of a turkey carcass!

Smile   This sure is great and really " yummy"  but instead of using bread, I used flour tortilla wraps and everyone loves          it!

My mom made turkey barbecue it was so good she never used a recipe. I'll try this recipe it sounds good.

This is the first year we didn't host Thanksgiving & I soooo missed the leftovers, that I went out and got a turkey and cooked it today! LOL... my husband is looking forward to those turkey sandwiches!

i always take as much meat off and then boil the carcass and use most of the dark meat and some breast for turkey and noodles. When all the big pieces of breast are gone I use the rest for something else. Tonight I took the last of the turkey and made a turkey pot pie with a crescent roll crust. it was sooo good!

We ate all of our leftover turkey.  But I'm planning on buying a turkey breat and cooking that just so we can try this recipe.  It sounds delicious and I can't wait to try it.  Thanks so much for sharing!

My husband wanted to freeze the left over turkey but complained it didn't get used.  I told him to slice it and pack it in pre made pouches.  In this way it got used.

I boil chicken noodle soup with the extra gravey to thicken it with, some of the extra turkey and use the recipe from the side the side of the bisquick box for dumplings and spread it across the entire top of a 9x13 pan or what ever size you use and it's great on a nice cold day.Very fillingTongue out

Well, one of the meals we always do with leftover turkey is turkey tacos. Instead of ground beef, warm some of the turkey (shredded) with some salsa & make tacos. I am also planning turkey enchiladas this year, where I usually use chicken.

The hands down winner in my family is turkey pot pie.  Use the leftover turkey, stuffing, gravy, vegetables, and mashed potatoes and add them to a partially cooked deep dish pie crust, top with another pie crust, seal the edges and bake until bubbly.  DeliciousSmile
