Noodle Soup in 10 Minutes

Noodle Soup in 10 Minutes

4–5 cups water
8 oz frozen mixed vegetables
1 tsp dried oregano
1/2 tsp chopped fresh thyme
1 pkg (3 1/2 oz) ramen noodles
1 sm onion, chopped
2–3 low-sodium bouillon cubes
1 tsp grated fresh ginger
2 cloves garlic, minced
Dash of lemon juice

Bring water to a boil in a large saucepan over high heat.

Add mixed vegetables, oregano, and thyme and return to a boil. Add noodles (discard the seasoning packet) and cook 4 minutes.

Add onion, bouillon cubes, ginger, garlic, and lemon juice and cook 4 minutes, or until cooked through. Remove from the heat and serve.

Makes 4 servings

Per serving: 89 calories, 3 g protein, 16 g carbohydrate, 2 g fat, 1 mg cholesterol, 3 g fiber, 842 mg sodium

By the way…
You can also add chopped cooked chicken or beef for a heartier soup.

I used 4 cups (32 oz box) of chicken broth instead of water and bouillon cubes. I also added 1 1/2 teaspoons of parsley.  Tongue outThis was a good comfort food!

Since ramen noodles are fried perhaps I will try it with a different pasta. They used to make baked ramen but I have not seen it around lately.

Used to make something similar for my family in a time crunch. Boiling the water, seasonings, whatever veggies I have on hand. Then adding the noodles in the last 5 minutes. Once the noodles were cooked I would add a scrambled raw egg. It was a hit with everyone!

I don't want to be a "spoil sport", but one of my daughters hates even the smell of ramen noodles, so...  Thanks for sharing anyway!! If only we could please everyone easily!!

I will try this with Less Sodium Chicken Broth instead of the bouillon cubes and water. I have to watch my sodium intake. Thanks for the great recipe.

I will definitely try this.  I don't cook, and I wish I felt comfortable in the kitchen, but mine is just too small.  I have a good friend who is a southern girl and she can cook the best soup ever.  She always brings left overs to work for lunch and says that it is just a little of this and a little of that and some leftovers.  But it smells so darn good!!
