Carving a Pumpkin? Make Dip

1 tsp + 1 Tbsp extra virgin olive oil
2 tsp minced garlic
1 tsp ground cumin
1 3/4 cups cooked chickpeas or 1 can (15 1/2 oz) chickpeas, rinsed and drained
3/4 cup chicken or vegetable broth, divided
1 tsp minced fresh red chile pepper (wear plastic gloves when handling)
1 Tbsp lime juice
1/4 tsp salt
2 Tbsp coarsely chopped toasted pumpkin seeds

In a large skillet, combine 1 teaspoon oil, garlic, and cumin. Cook over low heat 1 minute, or until sizzling and fragrant. Do not brown garlic. Add chickpeas, 1/2 cup broth, and chile pepper. Cook, smashing chickpeas occasionally with a fork, about 8 minutes, or until scant liquid remains.

Transfer mixture to a food processor fitted with a metal blade or to a blender. Add lime juice, salt, and remaining 1 tablespoon oil. Process about 30 seconds, scraping down sides of the bowl as needed, until mixture is consistency of chunky peanut butter. Add up to 1/4 cup more broth and process to make a moist but not runny consistency. Taste and add more chile pepper, if desired.

Transfer to an 8"-wide dish (such as a pasta bowl) that has sides at least 1 1/2" high. Spread to smooth. Scatter seeds evenly on top. Cover and refrigerate at least 1 hour (or as long as 1 day) to allow flavors to develop.

Makes 10 servings (2 Tbsp each)

79 calories, 3 g protein, 9 g carbohydrate, 4 g fat, 0 mg cholesterol, 2 g fiber, 71 mg sodium

sounds like a delicious and healthy snack.  Will try, we still have a few pumpkins we didn't carve for halloween so we can still use the seeds.

I make hummus almost every week and my whole family loves it!!  Since I often like to try something new, I will definitely try this exactly as the recipe describes, then another batch listening to a "little voice" that is telling me I may want to increase the amount of lime juice and decrease the broth!!

If you've been looking for something to do with pumpkin seeds, try this:My mom always used to bake the seeds in the oven, in the shell. However, this is really not the best way because they come out hard. I would not recommend toasting the seeds in the shell. In fact, I wouldn't toast them at all. What the mexicans ususally do with pumpkin seeds is to fry them in oil (and sprinkle with salt, just as you would french fries). They come out crispy, nutty, and delicious!! I like them alone as a snack.

This recipe fits into our annual pumpkin carving get together.  But now it is with the grandkids.  I have always baked the seeds after carving while little eyes looked on.  Alas, a new recipe with some of the seeds. Anxious to try it. Thanks and have a Happy Halloween!!!

Hum, you have failed to explain if you need to cook the seeds or leave them raw. Also, do you shell the seeds first (I have learned never to assume, and have dishes that call for them whole!)? While making pumpkin seeds is a treat my kids look forward to each year, there are probably several others who have never done it! You might want to add an explination or a link for answers! Also, for those who are not carving a pumpkin you can purchase pumpkin seeds much as you would sun flower seeds!
