No-Excuses Veggie Mix

1 bag (16 oz) frozen cauliflower florets
2 cups (half of 14-oz bag) frozen cut Italian green beans, cut green beans, or sugar snap peas
2 cups cherry tomatoes
1/2 cup dried whole-grain bread crumbs
1/3 cup grated Pecorino Romano cheese
1 Tbsp extra virgin olive oil
1 tsp minced garlic

Preheat oven to 400ºF. Coat a 13" × 9" baking dish with olive oil spray.

In a large saucepan, bring 1 cup of water to a boil. Add cauliflower and beans, cover, and cook 3 minutes, then drain. Distribute cauliflower, beans, and tomatoes evenly in the prepared dish.

In a small bowl, combine bread crumbs, cheese, oil, and garlic. Stir with a fork until blended. Sprinkle mixture evenly over vegetables.

Bake about 20 minutes, or until crumbs are golden brown.

Makes 8 servings

Per serving: 90 calories, 5 g protein, 10 g carbohydrate, 4 g fat, 5 mg cholesterol, 4 g fiber, 140 mg sodium

You could also use California Medley--broccoli,cauliflower,carrots.Throw in some mushrooms too!Yummy!Heidi on 10/13/2009 1:55 pm.

Definitely will try. I am all about my veggies!!! I love Italian green beans too and topped with grated romano cheese and whole-grain bread crumbs, sounds just like something my family would love.

im on a diet and bread crumbs and cheese are out, i wish i could find something that doesnt have that stuff in it, im looking for something different. HELP !!!!!!

This looks like a recipe that could be changed and added to many ways.  We love broccoli so will try that too.  How about Italian Bread Crumbs?  So many ideas, so little time.  Thanks for a new one to play with.Coni
