Another Side to Apples

8 slices whole-wheat bread
2 Tbsp reduced-fat mayonnaise
4 tsp Dijon mustard
8 slices soy cheese (any variety)
2 med Red Delicious apples, halved, cored, and thinly sliced
2 Tbsp chopped walnuts (optional)

Preheat oven to 325ºF. Arrange bread on a baking sheet.

Spread mayonnaise and mustard on each bread slice and top each with cheese slice. Arrange apple slices on top.

Bake about 10 minutes, or until cheese has melted.

If desired, sprinkle each sandwich with walnuts. Press slices together or serve sandwiches open-faced.

Makes 4 servings

Per serving:
291 calories, 16 g protein, 35 g carbohydrate, 10 g fat, 2 mg cholesterol, 6 g fiber, 990 mg sodium

I like this idea but I don't think I would add the dijon  mustard.  Mayo, yes:  mustard, no.

Another idea for "apple sandwiches" is to spread Cream cheese on two pieces of rasin bread, sprinkle with a little cinnamon, add slices of apple to one side of bread and top with other.  YOu can either grill or bake for a few minutes to melt the cheese.  Or, you can use regular bread, peanut butter and apple slices and do the same thing.  Very tasty!

Yum!!!! I love putting thinly sliced apples on sandwiches. It's a great way to sneak in an extra fruit serving in your day.One of my favorite sandwiches is pumpernickle bread, blackforest ham, cheddar cheese and green apples. Yummy!!!!!!!

I would like this but not sure the kids would.  I used to make my kids sliced apple and peanut butter sandwiches for lunch.  I also use to cut the top off an apple,  core it, put peanut butter inside and put the cut top back on as a lid.  I would pack these in their school lunches and they loved them.

I think sounds delicious.  I think I will try it with a smokey gouda with granny smiths or cheddar with a sweeter apple.

tried it both ways, DEFINATELY DO NOT use the soy,it was horrid, was wonderful with the goats milk cheese I substituted the next time.

I make a "special" sandwich (my son's name for it) I slice apples into thin-ish slices, and put them on a sandwhich with peanut butter (creamy) and a slice of medium cheddar cheese. It so good!!! My kids like it and it's something easy and good for them.

sounds interesting.  I'll probably use vegan rice cheese (one that melts).  Not sure I'll put on the mustard, but might just to try it.
