Dessert:  Fruit + Soda = Black Cherry Baked Apples

4 baking apples
1/2 teaspoon cinnamon
1/4 cup dried cherries or raisins
1/4 cup chopped walnuts
1 cup diet black cherry soda

Preheat the oven to 375°F. Using an apple corer or small knife, remove apple cores from stem ends without cutting all the way through the other end. Place the apples in a 9” x 9” baking dish.

Sprinkle cinnamon inside and outside of apples. Spoon the cherries or raisins and walnuts into the apples. Drizzle a little soda into each apple. Pour the remaining soda into the baking dish. Bake for 20 minutes, or until tender.

Makes 4 servings


Per serving: 132 calories, 1 g protein, 33 g carbohydrate, 1 g total fat, 0 mg cholesterol, 3 g fiber, 5 mg sodium

This sounds wonderful and with the apple trees in our back yard it is GREAT to have a new recipe to try for our fall party!!

I have a hard time coring an apple without going all the way through the apple.  It takes way to long to core an apple this way.
