Guiltless Potato Salad

Guiltless Potato Salad

1 1/2 lb small red potatoes, halved
3 carrots, thinly sliced
2 ribs celery, finely chopped
2 Granny Smith apples with skin, cored and finely chopped
1/2 sm onion, sliced
1/2 cup light mayonnaise
1/2 cup fat-free plain yogurt
1/4 cup fat-free lemon yogurt
1 Tbsp chopped fresh dill
1 Tbsp finely chopped parsley
1 Tbsp Dijon mustard
1/4 tsp salt

Place potatoes in a large saucepan with enough water to cover. Cook over medium heat 10 minutes. Add carrots and cook 8 minutes. Drain and rinse with cold water. Allow to cool.

In a large serving bowl, combine celery, apples, onion, mayonnaise, plain yogurt, lemon yogurt, dill, parsley, mustard, and salt. Add potato mixture and stir gently to combine. Cover and refrigerate 2 hours before serving.

Makes 8 servings


Per serving: 121 calories, 3 g protein, 18 g carbohydrate, 5 g fat, 5 mg cholesterol, 5 g fiber, 270 mg sodium

Would never have thought of adding apple to potato salad but, since I love Waldorf salad, I know that I will like this one.  Can't wait to try it.  Thanks for a new twist to a family favorite.

Everyone is looking to cut calories and not tase and this recipe sounds wonderful.  I entertain a lot in the summer so I will definately be trying this on my guests.

cutting the mayo and upping the mustard will cut even more calories and up the flavor (in my opinion). Regardless, sounds great!

I've used red onion to add extra color in my potato salad. Also to get some extra flavor try scallions, not only the lovely green, but using it right down to the bulb. It's so Yummy.Lindalu

This doesn't sound very good to me but I plan on trying it anyway.  I like the fact that it is potato salad  and if I do like it, I won't feel guilty!

I don't know about the apples in potato salad but with only 121 calories, it's definitely worth trying.

It will certainly be better than the store's "mayonnaise salad with potato"!.  and sounds tastier than my usual recipe.  I often add a little well-drained pickle relish for taste and color.

Apples?  Never would have thought it! Good thing I have my granddaughter to help me prep. I love potato salad, but don't like the prep time.
